Tuscan Chicken w/ Pasta

Yields: 2 Servings

Ingredients

  • 2oz. Penne

  • 10 oz. Chicken Breast

  • 4c baby spinach

  • 1c Cannellini Beans (rinsed)

  • 1 tsp olive oil

  • 1 clove of garlic (crushed)

  • 1/2 tsp dried rosemary (finely chopped)

  • 2 heaping Tbsp roasted red peppers (diced)

  • 2 Tbsp grated parmesan

  • Salt & Pepper to taste

Instructions

  1. Cook pasta per directions on the package

  2. While pasta cooks, sear the chicken in a skillet on medium-high, seasoning each side with salt, pepper and granulate garlic (to taste). Remove chicken and set aside

  3. Reduce skillet heat to medium. Add oil, garlic, onion. Saute until onion is translucent. Add beans, rosemary, spinach, and peppers. Turn frequently until spinach wilts.

  4. Slice chicken and toss it in with bean mixture and pasta. Top each serving with 1 Tbsp of cheese
